WINE TASTING & SMALL PLATE PAIRING. DEMONSTRATION. While wines from the Cotes du Rhone region of France are easy to pair with a variety of foods, we're not sure that theory has been tested by pairing them with chiles from New Mexico. Be a part of this experiment and you'll become a believer. An expert will introduce you to these well priced wines from France and our Cooking School Staff show you how to make these dishes with mild Hatch chiles:
Granny Smith Apple, Hatch Chile & Grilled Shrimp Salad paired with Maison Les Alexandrins Viognier;
Roasted Chicken Thighs on a Bed of Rice Pilaf with Hatch Chiles, Mexican Oregano & Toasted Pine Nuts paired with Maison Les Alexandrins Cotes du Rhone Blanc;
Grilled Sirloin Tips with Blueberry/Hatch Barbecue Sauce & a Simple Cabbage Slaw paired with Maison Les Alexandrins Syrah;
Tartine topped with Tapenade, Roasted Red, Yellow & Hatch Peppers & Pepper-crusted Lamb paired with Maison Les Alexandrins Cote du Rhone Rouge.

ABOUT DOMAiNE & MAISON LES ALEXANDRINS
Domaine & Maison Les Alexandrins is the result of a collaboration in 2012 of Nicolas Jaboulet, 6th generation in a wine growing family; Guillaume Sorrel, son of Marc Sorrel of Domaine Sorrel in Hermitage; and Alexandre Caso, specialist in the terroirs of the Northern Rhone. Their shared knowledge of the terroir, of the wines that have marked the history of the Northern Rhone Valley, and their appreciation of the great wines of their region inspired them to move forward together. In 2015, Maison Nicolas Perrin took a majority share in Domaine Les Alexndrines. These Northern Rhone wine embody pure classicism and continue the traditon of quality established by the founders.
